The grapes for this Cabernet Sauvignon come from Avant Vineyard, one of the many beautiful sites on the Western Slope of Colorado that we work with. Avant is farmed by one of our growers Neil Guard, who harvests the grapes by hand. As always, the grapes are brought here to the winery where we produce the wine without additives or adulteration. This is key to preserving the terroir of the vineyard as well as respecting the noble flavors of the varietal.
Avant is planted on the right bank of the Colorado River (Orchard Mesa) which tempers the hot weather, leading to cool nights and ideal growing conditions especially for Cabernet Sauvignon. Sensing the wine was powerful and bold, we decided to use newer oak knowing that the wine could stand up to the richness of the barrel without loosing any elegance or complexity.
Already, this wine is showing the classic character of Cabernet. On the nose, it slowly reveals aromatics indicative of cassis, raspberry and black tea. Powerful, intense and structurally balanced, this wine is for the purists who love masculine, bold Cabernet. It’s drinking fantastically right now but will surely develop further in the bottle. If time permits, decant this wine for up to an hour before serving. This extra air will bring a brightness and clarity to the fruit despite the wine being young.
